Ingredients

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground chicken
  • 1 tablespoon tomato paste
  • 1/4 cup chicken broth or water
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • Optional: pinch of cayenne pepper for heat

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and minced garlic, sauté until soft and fragrant.
  3. Add ground chicken, breaking it up with a spoon, and cook until no longer pink.
  4. Stir in tomato paste and chicken broth to keep the meat moist.
  5. In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, onion powder, and salt.
  6. Sprinkle seasoning over the chicken and stir well.
  7. Add a splash more broth if needed, and simmer for 5 minutes.
  8. Serve in tortillas or use in bowls, nachos, or casseroles.
